400 grams lamb (such as shoulder)
1 stalk Celery
2 onions
2 garlic cloves
500 grams Beefsteak tomato
2 Tbsps clarified butter
800 milliliters lamb stock
125 grams Peanut butter
salt
freshly ground pepper
1 tsp Curry powder
1 Tbsp lemon juice
1 red chili pepper
4 Tbsps unsalted Peanuts (toasted)(coarsely chopped)

Preparation steps

Rinse and trim the celery. Peel the onions and garlic. Cut the onions, garlic and celery into small cubes. Rinse the chiles, cut in half, remove the seeds and very finely chop. Cut the lamb into bite-sized pieces. Heat the butter in a wide saucepan and sauté the celery, garlic and onions over medium heat. Add the meat and sauté.

Season with salt, pepper, curry and lemon juice and pour in the lamb stock. Stir in the peanut butter and stir chiles and simmer over low heat, stirring occasionally, for about 15 minutes. Meanwhile, blanch the tomatoes, peel and cut the pulp into small cubes. Stir into the soup and simmer for 10 more minutes. Season to taste and serve sprinkled with chopped peanuts.
