0.333 cup sugar
1 Avocado (peeled and pitted)
1 unwaxed Lime (juiced, zest grated)
½ cup Champagne
1 egg white (beaten)

Preparation steps

1.
Place the orange juice and sugar into a pot and bring to the boil. Remove from the heat and leave to cool.
2.
Puree together the avocado and the lime juice and zest. Stir in the orange juice and the champagne and fold in the egg white. Pour into a flat container and freeze for at least four hour stirring every 30 min.
3.
Serve in scoops and garnish with raspberries and icing sugar.
