- 6 sheets white gelatin
- 2 cups cream (at least 30% fat)
- 3 Tbsps sugar
- 1 Vanilla bean (cut in half lengthways)
- 1 ⅔ cups fresh Raspberries (some set aside to garnish)
- 1 Tbsp Raspberry liqueur
- powdered sugar
- Chocolate decoration (to garnish)

Preparation steps
1.
Soften the gelatine in cold water and place the cream, sugar and the vanilla pod in a pot and simmer on a medium heat for around 8 min.
2.
Remove the vanilla pod from the cream and wring out the gelatine sheets. Add the gelatine to the hot vanilla cream and stir until dissolved.
3.
Pour the mixture into four small moulds (approx. 150 ml) and chill for six hours.
4.
Purée the raspberries using a hand blender and then sieve. Stir in the raspberry liqueur and icing sugar to taste.
5.
Dip the moulds in hot water, loosen the edge with a knife and knock the panna cotta out onto plates. Serve with the raspberry sauce and garnish with the remaining raspberries and the chocolate decorations.
