Creamy Cod Curry
- For the spinach
- 3 Tbsps Oil
- 1 onion (finely chopped)
- 2 cloves garlic cloves (chopped)
- 2 tsps Garam Masala
- 4 Spinach (washed and finely chopped)
- 1 Tbsp butter
For the spinach, heat the oil in wide pan and cook the onion until soft but not brown.
Add the garlic and garam masala and cook for 2 minutes then add the spinach and cook very gently, stirring from time to time, for 10 minutes. Stir in the butter, season with salt and pepper and set aside and keep warm.
For the curry, heat the oil in a wise pan and fry the chile powder, turmeric and garam masala for 2 minutes.
Pour over the coconut milk and fish broth, bring to a boil and simmer for 10 minutes. Season with salt and pepper, add the cod and cook very gently for 5 minutes or until the cod is just cooked through.
Serve with boiled rice.
