Preparation steps

Peel and dice the shallots and celery. Heat the butter in a saucepan. Add the shallots and cook until soft. Add the celery and cook briefly. Stir in the vegetable stock and cream, and simmer over low heat for 10 minutes. Strain through a fine sieve into another saucepan. Reheat the sauce and stir in the mustard. Season with salt to taste. If desired, serve with noodles.
