- 50 grams Wild rice
- salt
- 500 grams Broccoli
- Vegetable broth
- 1 cup Whipped cream
- freshly ground pepper
- freshly grated Nutmeg
- red peppers

Preparation steps

Cook the wild rice in boiling salt water according to the package instructions. Drain well. Rinse the broccoli and divide into florets. Peel and finely chop the broccoli stems. Bring the vegetable broth to a boil. Add the broccoli and simmer for about 10 minutes. After about 6 minutes, remove some of the broccoli and set aside. Puree the soup. Stir in the cream and bring to a boil. Season with salt, pepper and nutmeg. Add the broccoli and wild rice and heat briefly. Serve sprinkled with coarsely chopped red pepper.
