5 Tbsps Oil
2 Leeks (chopped)
1 stick Celery
4 cups potatoes (peeled and chopped)
4 cups vegetable stock
2 handfuls Wild garlic leaf (washed)
cup cream
1 onion (sliced into rings)

Preparation steps

1.
Heat 3 tbsp oil in a large saucepan. Add the leek and celery and cook gently for 5 minutes.
2.
Add the potatoes, stir for 2 minutes then pour in the stock and bring to a boil. Cover and simmer over a low heat for about 30 minutes.
3.
Add the wild garlic leaves, cook for 5 more minutes then remove from the heat.
4.
Whizz the soup in a blender until smooth, add the cream and season to taste with salt and pepper.
5.
Fry the onion rings in the remaining oil and drain on kitchen paper.
6.
Gently reheat the soup and serve with the fried onion rings.
