1 onion
1 garlic clove
1 Tbsp vegetable oil
2 packets Frozen spinach (each about 300 g)
salt
freshly ground peppers
1 pinch Nutmeg
300 grams Crabmeat
200 grams butter
2 egg yolks
4 Tbsps dry Vermouth

Preparation steps

For the spinach and crab: Peel and chop the onion and garlic. Heat the oil in a pot. Add the onion and garlic, and cook until translucent. Add the spinach and 100 ml (approximately 1/2 cup) of water. Bring to a boil over medium heat and cook for 15 minutes. Season with salt and pepper to taste, and the nutmeg.

Divide the spinach between individual baking dishes. Top with the crab meat.

For the hollandaise: Melt the butter in a pot and skim off the white foam. Combine the yolk and vermouth in a bowl, and season with salt and pepper to taste. Set over a pot of simmering water and beat until thick and foamy. Gradually beat in the melted butter. Stir in the lemon juice and creme fraiche.

Pour the hollandaise over the crab and spinach. Bake in a 200°C (approximately 390°F) oven for 15 minutes.
