- 300 Couscous
- 1 sm can ground saffron (1 g)
- 1 pinch Ground clove
- 1 pinch cinnamon
- Nutmeg
- salt
- freshly ground peppers
- 1 l fish stock
- 300 grams fish fillets (Portion pieces z. B. cod, perch ...)
- 150 grams Squid ring
- 150 grams small shrimp (peeled ready to cook)

Preparation steps

Dissolve the saffron in a few tablespoons of fish stock. Combine the couscous, cloves, cinnamon, nutmeg, salt and pepper in a bowl.

In a large pot, bring the fish stock to a boil. Reduce to a simmer and add the pieces of fish, squid and shrimp. Place the couscous mixture in a colander with small holes, and place it over the pot of simmering stock.

Cover the pot tightly and steam the couscous, occasionally loosening it with a fork and cook until the fish is done and the couscous is tender, about 20 minutes. Serve the fish with the couscous and some of the broth on the side.
