- 2 Tbsps vegetable oil
- 1 onion (chopped)
- 1 small Leek (chopped)
- 1 carrot (chopped)
- 1 red pepper (deseeded and chopped)
- 1 ¼ cups Pearl barley (rinsed)
- 5 cups gammon (brined or dry-salted pork)
- 5 cups ham stock (or water)
- 2 Tbsps Mustard
- 4 Tbsps Pesto
- salt

Preparation steps
1.
Heat the oil in a large saucepan and gently cook the onion until soft but not brown. Add the leek, carrot and red pepper and continue cooking for 2 minutes.

Stir in the pearl barley and cook until coated with the oil then add the gammon and stock. Bring to the boil, and then gently simmer for 45 minutes or until the pearl barley is tender. You may need to add a little water during cooking.
3.
Season the soup with salt and pepper then spoon into warmed bowls and stir a tablespoon of pesto into each bowl.
