3 Figs
2 Tbsps lemon juice
1 Tbsp Maple syrup
3 ½ ozs Cottage cheese
2 Tbsps Shredded coconut
4 leaves fresh mint

Preparation steps

1.

Toast the grated coconut in a dry frying pan until golden brown. Remove and set aside. Peel the pineapple and cut into quarters lengthwise. Remove the core and cut into small pieces.

Rinse the figs, quarter and cut into slices. Mix the fig slices with the pineapple chunks. Whisk together the lemon juice with the maple syrup. Stir the syrup with the mint and mix with the fruit.

3.

To serve, place grained cream cheese (or cottage cheese) in bowl and gently fold in the coconut and fruit mixture.
