Preparation steps

1.

Toast pine nuts in a frying pan over medium heat until fragrant, remove from heat and set aside.

2.

Rinse peppers, remove seeds and ribs and cut into small cubes. Rinse arugula, spin dry and chop.

3.

Mix pine nuts with peppers, arugula, cheese, oil and vinegar, season with salt and pepper and distribute over 2 bowls.
