- 2 Tbsps Oil
- 3 ½ ozs Bacon (cut into strips)
- 1 onion (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 14 ozs floury potatoes (peeled and diced)
- 14 ozs canned Sweet corn (drained)
- 2 cups vegetable stock
- ⅜ cup cream (35% fat)
- ¼ cup Crème fraiche
- salt
- peppers
- 2 Tbsps chopped parsley
- To garnish
- flat-leaf parsley

Preparation steps
1.
Heat the oil in a large pan and fry the bacon quickly until lightly browned. Remove from the pan.
2.
Add the onion and garlic to the pan and cook for a few minutes until softened. Add the potatoes, sweetcorn and stock. Bring to a boil, then reduce the heat and simmer for 15 minutes. Allow to cool slightly.
3.
Put the mixture into a blender or food processor and blend to a puree. Return to the pan.
4.
Simmer gently until thickened, then add the bacon.
5.
Stir in the cream, crème fraîche and parsley and season to taste with salt and pepper. Heat gently until hot, but do not boil. Serve garnished with parsley.
