- 1 carrot (grated)
- 1 small onion (finely chopped)
- 14 ozs skinless, boneless Chicken breasts (finely chopped)
- 1 cup fresh breadcrumbs
- 1 egg (beaten)
- 7 ozs canned Sweet corn (drained)
- salt (to taste)
- peppers (to taste)
- Oil (for frying)

Preparation steps
1.
Mix together all the ingredients, except the oil, in a mixing bowl. Form into 15-18 round patties.
2.
Place the patties on a plate, cover with cling film and chill for 30 minutes.
3.
Heat the oil in a frying pan, about 1.5 cm|1/2" deep and cook the patties, a few at a time for 3-4 minutes on each side.
4.
Serve with a chilli dipping sauce and green salad.
