- 4 cups skinless Chicken breasts (cut into 1 inch cubes)
- 1 red pepper (chopped into 1 inch squares)
- 1 yellow pepper (chopped into 1 inch squares)
- ¼ cup olive oil
- salt
- Black pepper
- 2 Tbsps Wholegrain Mustard (plus extra for garnishing)
- cilantro (to garnish)
- wooden Skewer (soaked in water for 30 minutes)

Preparation steps
1.
Whisk together the mustard and olive oil in a mixing bowl. Marinate the chicken breast in this mixture for at least 15 minutes.
2.
After 15 minutes, heat the grill to hot.
3.
Prepare the kebabs by skewering the pieces of pepper and chicken breast evenly onto the wooden skewers. Brush with a little of the reserved marinade and season well.
4.
Grill for 10-12 minutes turning occasionally.
5.
Remove and serve immediately with a coriander garnish and some extra wholegrain mustard.
