Colorful Vegetable Salad
Rinse, trim and tear mache and arugula into bite-sized pieces. Peel and halve cucumber lengthwise, scrape out seeds and dice. Rinse and halve tomatoes. Coarsely chop sun-dried tomatoes.
Rinse, trim and cut scallions crosswise on the diagonal. Whisk together sugar, vinegar and oil and season with salt and pepper. Toss salad with vegetables and dressing and season to taste.
