1 large Beet (or two small), boiled, peeled and very finely diced
6 ripe Tomatoes (deseeded and finely diced)
1 Red onion (finely chopped)
1 sweet Apple (e. g. Golden Delicious), very finely diced
5 Tbsps Basil (freshly chopped)
olive oil
Cider vinegar
Ciabatta (4 large slices, cut in half horizontally)
4 leaves Lettuce
4 Cod (150 g each)
1 lemon (juiced)
1 ball Mozzarella (approx. 125 g) drained and cut into 8 thin slices

Preparation steps

In a large bowl, mix the beetroot, tomatoes, onion, apple and basil with 4 tbsp olive oil and 2-3 tbsp apple vinegar, and season with salt and ground black pepper. Infuse for 30 minutes then check the seasoning.

Toast the cut surface of the bread under the grill. Drizzle each slice with 1 tbsp olive oil and season with a little salt. Place 1-2 lettuce leaves on the flat-bottomed pieces.

Drizzle the cod with lemon juice and season with salt and ground black pepper. Lightly oil a griddle pan and and grill the fillets for 2-3 minutes on each side.
4.
Arrange the fillets on the prepared bread slices, place the mozzarella slices on top of the fish and spoon 2-3 tbsp of salsa over the lot.
