200 grams Chinese Egg noodle
1 stalk Leeks
2 Tbsps vegetable oil
400 grams Salmon
1 red chili pepper
salt
1 tsp freshly grated ginger
2 stems Lemongrass
1 onion
400 grams Coconut milk (unsweetened, 400 grams, approximately 1 2/3 cups)
1 Tbsp Oyster sauce
2 tsps yellow Curry paste
sugar

Preparation steps

1.

Cut the salmon into bite-sized pieces.

2.

Rinse, trim and cut the leeks into rings.

3.

Peel the onion and finely chop.

4.

Rinse chile, remove seeds and cut into rings as needed.

5.

Trim both ends of the lemongrass and peel the outer layers. Then dice finely.

Sauté the onions with ginger and chile rings in hot oil, add lemongrass and leek, stir in the curry paste and the coconut milk, salt lightly and simmer everything for 3-4 minutes. Then, add the salmon and season with oyster sauce and sugar for about 3 minutes.

7.

Meanwhile, cook the pasta in boiling salted water according to the package information, cook and drain. Serve noodles in bowls and distribute the curry in it.
