350 grams Tagliatelle
salt
1 shallot
4 Tbsps butter
2 Tbsps Pastry flour
100 milliliters dry white wine
100 milliliters fish stock
100 milliliters Whipped cream
8 Salmon (each 80 grams, skinned and boned)
peppers
2 Tbsps vegetable oil
2 Tbsps freshly chopped Tarragon
Daisy (for garnish)

Preparation steps

Cook pasta in a pot of boiling salted water until al dente.

Meanwhile, peel shallots for the sauce and finely dice. Melt 2 tablespoons butter in a pan and sauté shallots until translucent. Sprinkle with 1 tablespoon flour, stir and add wine. Add fish stock, let boil and gradually stir in cream. Simmer for about 5 minutes until slightly creamy.

Rinse salmon, pat dry and season with salt and pepper. Cover salmon in remaining flour. Heat oil in a pan and fry salmon on each side for 2-3 minutes until golden brown.

Season to taste with tarragon.

Add drained pasta to the pan, stir, add remaining butter to the pan, arrange mixed pasta on plates, cover with salmon and serve garnished with daisy flowers.
