- 300 grams Chicken breasts
- 100 grams Snow peas
- small chili peppers
- 2 Tbsps vegetable oil
- 400 milliliters unsweetened Coconut milk
- 350 milliliters Chicken broth
- salt peppers
- lemon juice
- 200 grams fresh Pineapple
- 1 Tbsp Shredded coconut
- mint (for garnishing)

Preparation steps
1.
Cut chicken breasts into strips. Rinse, trim and finely chop snow peas. Cut chile pepper into thin rings.
2.
Heat oil in a pot. Saute chicken, chile pepper and snow peas briefly. Add coconut milk and chicken broth and bring to a boil. Season with salt, pepper and lemon juice.
3.
Cut pineapple into small pieces and add to the soup, simmer for a few minutes. Sprinkle soup with grated coconut and mint leaves. Pour into bowls and serve.
