2 large pink Grapefruit (filleted, juice reserved)
4 Tbsps lemon juice
1 Vanilla bean (split lengthways, seeds scraped out)
4 Tbsps honey

Preparation steps

1.
Heat the grill function on the oven.
2.
Use a melon baller to scoop out balls of avocado. Put the avocado balls, grapefruit segments and juice in an oven-proof dish and carefully stir in the lemon juice.
3.
Add the vanilla pod and seeds and drizzle over the honey. Cook under the grill for around 5 minutes until slightly caramelised.
4.
Remove from the oven and serve warm, with vanilla ice cream, for example.
