Festive Pudding Spheres
ready in 50 min.
- ¼ cup unsalted butter
- 6 ozs Dark chocolate (70% cocoa solids)
- ¾ cup shortbread Biscuit
- 2 Tbsps finely chopped Walnut
- 2 Tbsps finely chopped Hazelnuts
- 2 Tbsps finely chopped almonds
- 2 Tbsps raisins
- 1 Tbsp Brandy
- vanilla extract
- 2 Tbsps cream (48% fat)
- cocoa powder
- To decorate
- sugar Holly leaf
- powdered sugar
- To serve
- Chocolate sauce
Melt the butter and chocolate in a heatproof bowl over a pan of simmering (not boiling) water.
Mix together the remaining ingredients, except for the cocoa powder in a mixing bowl and pour in the melted chocolate mixture. Mix well until thoroughly combined. Chill for 30 minutes.
Dust your hands with cocoa powder and roll portions of the mixture into balls. Decorate each ball with a cranberry and sugar holly leaf and sift over a little icing sugar.
Pour a little chocolate sauce onto serving plates and place the balls on top of the sauce.
