4 Apple (Eg Jazz, Cox Orange or russet)
8 tsps dried Cranberry
4 Cinnamon stick
2 Tbsps butter

Preparation steps

1.

In a saucepan, heat milk and bring to a boil. Stir in rice. Simmer for about 20 minutes over low heat, stirring occasionally. Cover and continue to cook until rice is tender, about 20 minutes. Stir in sugar and vanilla sugar.

Rinse apples, cut out cores with an apple corer, being careful not to puncture outer walls. Fill with cranberries and insert one cinnamon stick into cranberry filling. Tip: Wrap top of cinnamon stick with a small piece of aluminum foil to prevent scorching.

Place apples in an ovenproof dish. Top each apple with small pieces of butter. Bake in preheated oven on the middle rack at 200°C (fan: 180°C, gas mark 3-4) (approximately 400°F) for about 20 minutes. To serve, arrange apples on rice. Garnish with lemon balm, if desired.
