130 grams Dark chocolate
40 grams butter
2 tablespoons Rum
50 grams Cocoa
100 grams Ladyfinger
20 grams powdered sugar
½ teaspoon cinnamon
1 generous pinch ground Cardamom
1 generous pinch Vanilla bean
400 grams dark Couverture
2 tablespoons cocoa powder

Preparation steps

Chop the chocolate and melt with the butter over a hot water bath. Finely crumble the ladyfingers. Mix the cocoa nips, cookie crumbs, powdered sugar, cinnamon, cardamom and vanilla with the melted chocolate. Then stir in the rum. Shape the mixture into small balls and place on parchment paper and chill in the refrigerator.

Chop the dark chocolate and melt over a hot water bath. Dip the chocolate truffles with a dipping fork into the chocolate coating and place on a grid rack. Let the chocolate coating set briefly, then roll on the grid to create a design. Sprinkle with the cocoa and let stand until set.
