These truffles are a much healthier alternative to traditional truffles, relying on the natural sugar from plums for sweetness instead of added refined sugar.
These truffles also taste delicious made from cherries instead of plums.

- 5 ozs pitted Plum (dark red or purple)
- 4 Tbsps Plum brandy
- ¼ cup unsalted butter
- ⅔ cup cream (48% fat)
- 14 ozs plain Dark chocolate (70% cocoa solids, chopped)
- cocoa powder (to coat.)

Soak the plums in plum brandy overnight.
2.
Chop the plums and reserve the soaking liquid.
3.
Heat the butter and cream in a pan over a low heat until almost boiling. Remove from the heat.
4.
Stir in the chocolate and stir until melted.
5.
Add the diced plums and the soaking liquid and stir well.
6.
Pour into a shallow container and chill for 1-2 hours until firm enough to scoop.
7.
Shape pieces of the mixture into small balls with cocoa dusted hands.
8.
Roll in cocoa powder and place on non-stick baking paper. Chill for 30 minutes before serving.
