125 milliliters milk
100 grams Whipped cream
½ Vanilla bean
75 grams soft butter
1 centiliter Cognac (at will)

Preparation steps

1.

Melt chopped chocolate in a metal bowl over a pot of hot (not boiling) water and let cool to room temperature.

Grease pudding molds with butter, sprinkle with sugar and chill in the refrigerator.

Beat butter until fluffy and gradually stir in the egg yolks, then stir in chocolate and spiced rum.

Whisk egg whites with the pinch of salt and gradually add one-third of the sugar and beat until stiff. Gradually add and stir in remaining sugar.

Fold only one-third of the egg whites into the chocolate mixture, then the remaining and finish off with the almonds.

Line a deep baking sheet with paper towels and pour as much boiling water so that molds with 8 cm (approximately 3 1/8 inch) diameter are one-third in the water.

Fill molds three-quarters high with pudding mixture.

Put pudding in the hot water bath and bake in a preheated oven at 250°C (approximately 475°F) for 20 minutes. Remove from the oven and let stand briefly.

For the chocolate sauce: Chop the chocolate. Boil milk and sweet cream with a cut vanilla pod, add to the chocolate and dissolve it carefully. Then place softened butter in a bowl and slowly stir in chocolate-milk mixture into the butter while. Flavor chocolate sauce with cognac. Turn out chocolate pudding onto plates, sprinkle with powdered sugar, pour chocolate sauce over and serve warm. Serve with a fresh fruit compote as desired.
