0.333 cup powdered sugar
½ cup sugar
1 large egg
1 tsp vanilla extract
1 ½ cups all-purpose flour
½ cup butterscotch chip
½ cup Dark chocolate (70% cocoa solids, chopped)

Preparation steps

1.
Beat the butter and sugar in a mixing bowl until fluffy. Add both sugars and beat until well combined.

Add the egg and vanilla and beat until smooth.
3.
Add the flour, mixing until just incorporated, then add the butterscotch chips. Shape into a ball, wrap in cling film and chill for 1 hour until slightly firm.
4.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 baking trays with non-stick baking paper.
5.
Roll the dough into balls with floured hands. Place on the baking trays and flatten slightly, leaving space between them to spread out.
6.
Bake for 12-15 minutes, until lightly golden at the edges. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
7.
Melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and set aside to cool a little.
8.
Put into a piping bag and pipe criss cross lines on the cookies. Leave to set.
