Chinese Fish in Bamboo
Bring a large saucepan of water to a simmer. Rub the cod with the sesame oil and season well.
Place the cod steaks in a bamboo steamer and arrange the sliced ginger and red peppercorns on top of the cod. Put on the lid.
Place the steamer on top of the saucepan of simmering water to steam the fish; 5-6 minutes, until the fish is opaque and springy to the touch. Serve immediately with a few chive stalks on top as a garnish.
