- 3 cups Bamboo shoots in batons (frozen)
- 3 Tbsps light soy sauce
- 1 ⅔ cups Prawn (ready to cook)
- 1 clove garlic cloves (finely chopped)
- 2 Tbsps black Sesame seeds
- ⅜ cup vegetable stock
- 1 Tbsp Fish sauce
- brown sugar
- 1 Tbsp Lime juice
- 2 handfuls Thai basil (leaves picked and sliced)

Preparation steps
1.
Bring a pan of water to the boil and add the bamboo shoots with 2 tbsp soy sauce. Blanch for 2-3 minutes, then drain thoroughly.

Heat a little oil in a wok and quickly stir fry the prawns with the garlic. Add the sesame seeds, deglaze with the stock and season with fish sauce, soy sauce, a pinch of sugar and lime juice. Transfer to a bowl and mix with the bamboo shoots. Leave to cool to room temperature.
3.
Mix the basil through the salad, check the seasoning and serve.
