- 2 Cucumber (seeds removed and flesh chopped)
- 1 garlic clove (chopped)
- 2 scallions (finely chopped)
- 1 cup cold water
- 1 tsp Dijon mustard
- 3 Tbsps lemon juice
- 1 tsp sugar
- 1 tsp ground Cumin
- 3 Tbsps Dill (roughly chopped)
- To garnish
- ⅓ cup smoked Salmon (cut into strips)
- 4 tsps Sour cream
- 4 sprigs Dill

Preparation steps
1.
Place the cucumber, garlic, spring onions and water in a food processor or blender and puree until smooth.
2.
Place in a bowl and add the mustard, lemon juice, sugar, cumin and dill. Season with salt and pepper and chill for at least 2 hours.
3.
Serve the soup garnished with a swirl of sour cream, the smoked salmon, dill and black pepper.
