- 600 grams Sour cherry
- 800 milliliters Cabbage
- 80 grams sugar
- ½ tsp cinnamon
- 1 pinch ground cloves
- 20 grams cornstarch
- 2 egg whites
- 2 Tbsps sugar
Preparation steps
Rinse and remove the stones from the cherries. Heat the cherry juice, sugar, cinnamon, and the cloves. Mix the cornstarch with a little cold water until smooth. Stir into the cherry juice and bring to a boil. Add the cherries and simmer gently for 10 minutes. Remove from the heat, and chill for at least 1 hour in the refrigerator.
Beat the egg whites with the sugar until stiff. Fill a large pot with 4 cm (approximately 1 1/2 inches) of water, and bring to a boil. Form quenelles using 2 teaspoons, then add to the boiling water. Cover and cook for 3 minutes, then flip the dumplings and cook another 3 minutes.
Spread the cherry soup into bowls. Remove the dumplings from the pot and drain well. Top each bowl of soup with 2-3 dumplings, and serve immediately.
