- 150 grams Celeriac
- 2 shallots
- 4 garlic cloves
- 3 Tbsps olive oil
- 400 milliliters Vegetable broth
- 1 can white Beans (about 400 ml)
- salt
- freshly ground peppers
- 100 milliliters Whipped cream
- 1 tsp Sherry vinegar
- Basil (for garnish)

Preparation steps

For the soup: Peel the celery, shallots and garlic, and chop. Heat the olive oil in a pot. Add the vegetables and cook until the shallots are translucent. Stir in the vegetable broth. Rinse the beans in a colander and add to the pot. Season with salt and pepper to taste, and simmer for 10 minutes.
Once cooked, stir in the cream and bring to a boil again. Puree the soup in a blender and press through a fine sieve into a pot. Stir in the vinegar.
For serving: Serve soup chilled and garnished with basil.
