The refreshing cucumber provides a good amount of liquid and cushions the skin from the inside. Buttermilk supplies protein and the mineral calcium, which supports the health of bones and teeth.
Instead of leek, the cold soup can also be topped with something sweet, such as fresh strawberries.

- 1 Cucumber
- 1 sm stalk Leeks
- 8 ozs low fat Buttermilk
- 4 Tbsps lemon juice
- salt
- white peppers
- 1 Tbsp chopped Dill
- 1 Tbsp chopped parsley
- Tabasco sauce (to taste)
- cold vegetable stock (as needed)

Preparation steps
1.
Rinse cucumber, cut in half lengthwise and scrape out the seeds. Cut the cucumber into small pieces.
2.
Rinse leek and cut into narrow strips. Set half of leek aside. Mix the remaining leek with the cucumber pieces, dill and parsley. Puree with an immersion blender.
3.
Add buttermilk. Add cold vegetable stock to taste. Season with lemon juice, salt, pepper and Tabasco. Serve chilled with additional leek as garnish.
