600 grams fresh Beans
2 Tbsps Savory

Preparation steps

1.

For blanching, bring a large pot of water to a boil with the savory.

For chilling, prepare a large bowl with cold water and ice cubes.

Rinse the beans. If necessary, carefully remove the threads and cut off the ends. Halve the larger beans.

3.

Place the beans in boiling water (in portions) and cook for about 10 minutes. They should be cooked but retain a bite. Remove the beans from the pot with a slotted spoon and place in the ice water for rapid cooling.

When the beans are cold, remove from the water and drain in a colander. Repeat with the remaining beans and set aside to be included with a main dish.
