- 1 small, red chili pepper (diced)
- ½ Organic Cucumber (cut in half lengthways, one half julienned, one half peeled and diced)
- 1 garlic clove (chopped)
- ⅞ cup Tomato juice
- 2 Tbsps olive oil
- 1 Tbsp white wine vinegar
- 1 tsp sugar

Puree all the vegetables with the tomato juice and season with oil, vinegar, salt, ground black pepper and sugar. Chill for 1-2 hours. Serve in glasses garnished with a cucumber stick.
