- 3 Red onions (thickly sliced)
- ¼ cup olive oil
- 4 cups canned cannellini beans (drained and rinsed)
- 2 cups canned chickpeas (rinsed and drained)
- 3 Tbsps finely chopped Basil
- 1 Tbsp parsley
- ⅜ cup Cider vinegar
- ⅓ cup sugar
- 1 ½ tsps salt
- ¼ tsp Black pepper

Preparation steps
1.
Preheat the grill.

Brush the onion slices with 1 tablespoon olive oil and grill for 4-5 minutes on each side, until lightly charred. Remove and set aside.
3.
In a large bowl, mix the beans, chickpeas, basil, warm onions and parsley.
4.
Whisk together the vinegar, sugar, remaining olive oil, salt, and pepper. Add the dressing to the beans mixture and toss to coat.
5.
Chill the salad for 3-4 hours, to allow the beans to soak up the flavours.
