- 200 grams peeled almonds
- 200 milliliters mild olive oil
- 2 tsps white balsamic vinegar
- 2 tsps sherry (semi-dry)
- 1 tsp salt
- Saffron (for garnish)
- flat-leaf parsley (for garnish)

Preparation steps
1.
Toast the planed almonds in a dry pan. Peel the garlic and chop. Puree in blender together with peeled almonds, olive oil, vinegar and sherry, season with salt and pepper.
2.
While pureeing add 350 ml (1 1/2 cups) cold water in a thin stream. Chill until ready to serve. Pour into cups and garnish with saffron threads and flat parsley.
