- 250 grams chickpeas
- 1 red onion (halved, thinly sliced)
- 1 small Cucumber (cored and thinly sliced)
- 3 Tomatoes (cut into eighths)
- 2 Tbsps White vinegar
- 1 Tbsp lemon juice
- 6 Tbsps olive oil
- salt
- freshly ground peppers
- 2 Tbsps parsley (finely chopped)

Preparation steps
1.
Rinse chickpeas in a colander and soak in plenty of water overnight.

Drain soaking water and replace with 1.5 liters (approximately 6 1/2 cups) of water, bring to a boil, reduce heat and simmer covered, for about 1 1/2 hours. Drain well.
3.
Mix vinegar, lemon juice, oil and salt and pepper to taste. Add chickpeas, cucumber, tomato, parsley and onion. Mix well and allow to marinate for a few minutes before serving.
