- 15 ozs canned chickpeas (drained and rinsed)
- 6 ozs Grape tomato (halved)
- 1 english Cucumber (peeled and chopped)
- 1 stalk Celery (rinsed and chopped)
- 1 handful cilantro (rinsed and finely chopped)
- 1 Tbsp lemon juice
- ¼ cup extra virgin olive oil
- kosher salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps
1.
In medium mixing bowl, gently stir together chickpeas, tomatoes, cucumbers, celery and cilantro until combined.
2.
In a small bowl or measuring cup combine the lemon juice, olive oil, salt and black pepper; stir with a whisk.
3.
Drizzle olive oil-lemon dressing over salad tossing gently until completely coated. Serve chilled or at room temperature.
