15 ozs canned chickpeas (drained and rinsed)
6 ozs Grape tomato (halved)
1 english Cucumber (peeled and chopped)
1 stalk Celery (rinsed and chopped)
1 handful cilantro (rinsed and finely chopped)
1 Tbsp lemon juice
¼ cup extra virgin olive oil
kosher salt (to taste)
freshly ground Black pepper (to taste)

Preparation steps

1.
In medium mixing bowl, gently stir together chickpeas, tomatoes, cucumbers, celery and cilantro until combined.

In a small bowl or measuring cup combine the lemon juice, olive oil, salt and black pepper; stir with a whisk.
3.
Drizzle olive oil-lemon dressing over salad tossing gently until completely coated. Serve chilled or at room temperature.
