1 organic lemon
250 milliliters Chicken broth

6 garlic cloves
2 Tbsps melted butter
250 grams Snow peas
2 Tbsps slivered almonds

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Rinse the chicken drumsticks and pat dry. Rinse the lemon in hot water, wipe dry and strip the peel with a zester. Squeeze out the juice and add to a roasting pan with the broth. Season the chicken with salt and pepper and place skin-side up in the liquid. Peel garlic, press through a garlic press and add to the roasting pan. Brush chicken pieces with the butter, place in the oven and braise for about 20 minutes, occasionally basting with the pan juices.

Rinse snow peas, trim and blanch in salted water for about 1 minute. Rinse in cold water and drain well. Combine with the lemon zest and almonds, sprinkle over the chicken legs and braise in oven until tender, an additional 5 minutes.

Season pan juices to taste with salt and pepper. Serve pan juices with the chicken and peas.
