- 1 Tbsp unsalted butter
- ½ cup uncooked Couscous
- 2 cups Chicken broth
- 2 Tbsps olive oil
- 2 skinless, boneless Chicken breasts (halved)
- 2 tsps ground Cumin
- ¼ cup prepared, store-bought Mango chutney
- 4 scallions (chopped)
- cilantro (about a handful; chopped)

Preparation steps

Heat butter in a large saucepan, add couscous and stir to coat. Add 1 cup of chicken broth, bring to a boil, reduce heat to lowest setting, cover and cook until the liquid is absorbed about 20-25 minutes.

Heat the olive oil in a large skillet over medium high heat. Sprinkle the chicken with the ground cumin and cook 3 minutes each side until lightly browned. Add the mango chutney to the chicken, stir well and cook briefly for 3 minutes, then add the remaining chicken broth and green onions. Continue to cook until chicken is cooked through about 15-20 minutes.

Fluff up the couscous with a fork, stir half the cilantro into the couscous, the remainder into the chicken and serve.
