1 small green Papaya
½ bunch scallions
2 Zucchini
500 grams Chicken breasts
3 Tbsps vegetable oil
400 milliliters unsweetened Coconut milk
2 sm jars Corn kernel (280 grams)
salt
freshly ground peppers
2 Tbsps finely chopped cilantro

Preparation steps

1.

Rinse, trim and chop the scallions.

2.

Rinse, trim and cut the zucchini into small pieces.

3.

Peel and chop the garlic.

4.

Halve the papaya, remove seeds and scrape out the pulp and chop.

5.

Season the chicken with salt and pepper and saute in 1 tablespoon hot oil about 5 minutes on each side. Remove and set aside.

6.

Sauté vegetables (except corn) in 2 tablespoons hot oil in a pot, pour in coconut milk, bring to a boil, cover and simmer about 15 minutes. Cut chicken into cubes, stir the drained corn and finely chopped cilantro leaves into the vegetables, heat and season with salt and pepper. Serve garnished with cilantro leaves with rice.
