3 cups fresh Tomatoes
1 onion (peeled and diced)
1 clove minced garlic cloves
2 dried, red chili peppers (coarsely chopped)
1 Tbsp Sesame seeds
2 Tbsps breadcrumbs
¼ tsp ground cinnamon
¼ tsp ground cloves
¼ tsp ground cilantro
2 ½ Tbsps good quality olive oil
1 cup chicken stock
2 Tbsps dark mexican chocolate (chopped)
1 red Bell pepper (washed; seeded and diced)
2 cups sweet Corn (frozen)
4 sprigs cilantro (for garnish)
8 red chili peppers (for garnish)
8 Cinnamon stick for garnish (optional)

Sauce can be prepared ahead of time.

Preparation steps

1.
Rinse chicken and pat dry with paper towels. Season well with salt and pepper. Set aside.
2.
Drop tomatoes into boiling water for about 40 seconds, refresh tomatoes in ice cold water, remove the skin and seeds, and roughly chop.

Place tomatoes, onion, garlic, chili, sesame seeds, breadcrumbs, cinnamon, cloves, coriander, and salt to taste in a blender and blend to a fine puree.

Heat 1/2 tablespoon olive oil in a skillet; add the tomato puree and cook gently over low heat, stirring frequently. Add the chicken stock and boil gently for about 10 minutes or until sauce is reduced slightly, stirring frequently.

Meanwhile, heat 1 tablespoon olive oil in a frying pan and saute the chicken on both sides. Cook over low heat for about 10 minutes or until juices run clear.
6.
Heat the remaining oil and sweat the chopped red pepper for 2 to 3 minutes. Add the sweet corn and simmer for about 5 minutes, or until heated through.
7.
Strain the tomato sauce through a mesh sieve and reheat. Add the chopped chocolate; stirring until the chocolate melts.
8.
Divide chicken and vegetables evenly between plates. Garnish with cinnamon sticks, chili peppers, and fresh cilantro. Spoon sauce around plate and chicken. Serve.
