- ¼ cup sugar
- ½ tsp ground cinnamon
- 1 red chili pepper (deseeded and finely chopped)
- ¼ tsp freshly ground Black pepper
- ¾ cup cream (at least 30 % fat)

Preparation steps

Bring the milk to the boil, add 150 g of the chocolate and allow to melt in the milk. Beat the egg yolks with the sugar until thick and foamy. Add the ground cinnamon, chopped chilli and pepper. Return the chocolate milk to the boil briefly, then stir into the egg yolk mixture. Cook very gently for about 10 minutes, until the mixture thickens, then cover and leave to go cold.

Whip the cream until semi-stiff and fold into the chocolate mixture with the rest of the chocolate. Pour the mixture into a shallow container and put into the freezer for about 5 hours, stirring well with a whisk every 20 minutes to prevent any large ice crystals from forming. Alternatively freeze in an ice cream maker. Transfer the ice cream to the refrigerator about 20 minutes before serving. Serve scoops of ice cream in small pots and garnish with chillies.
