Chicken Tagine with Couscous

- 3 onions
- 3 garlic cloves
- 8 Tbsps sunflower oil
- 2 Tbsps chopped parsley
- 2 tsps ground Cumin
- 1 generous pinch Saffron
- 4 Chicken legs
- salt
- peppers (ground)
- 1 pkg crushed Tomatoes (500 grams)
- 200 milliliters Chicken broth
- 2 Zucchini (about 700 grams)
- 1 sm can chickpeas
- 3 Tbsps raisins
- vegetable oil (for cooking)
- 400 grams Couscous
Preparation steps
Peel the onions and garlic, chop finely and mix with the oil, parsley and cumin in a bowl. Soak saffron in 2 tablespoons hot water and stir with the water into the oil.
Divide chicken legs at the joint.
Slide 1/3 of seasoning under the skin of the chicken legs, spread another third on skin and put the rest aside. Cover the chicken legs and marinate overnight.
Season the chicken with salt and pepper, cook in hot oil on all sides and place in a roasting pan. Stir tomato into broth with remaining seasoning mix and add to the meat, then season with salt and pepper. Braise over low heat, covered, about 25 min.
Rinse zucchini, trim and cut into 1.5 cm cubes. Add with chickpeas and raisins to the meat and cook another 15 min. Serve with couscous or flatbread.
Pour 1 cup boiling water over couscous and let soak for 5 minutes. Loosen the couscous with a fork and keep warm.
