1 bunch Soup vegetables (such as carrot, leek, parsnip or other aromatic vegetables such as celery or onion)
1 bay leaf
4 Juniper berries
2 chili peppers
2 carrots
1 sprig Lemongrass
1 stalk Leeks
400 grams Broccoli
150 grams Peas
light soy sauce
2 Tbsps Sesame seeds
1 Tbsp honey
2 Tbsps Chili sauce

Preparation steps

1.

Rinse the chicken and place in a large pot. Cover with water and bring to a boil. Skim off the resulting foam. Trim the soup vegetables, rinse and chop coarsely. add to chicken and simmer together with bay leaf, juniper and chiles 2.5 hours on low heat. Add some water if needed. Then remove the meat and let cool. Strain broth through a sieve and let cool also. Skim off fat as needed.

Peel the carrots and cut into slices. Trim both ends of lemongrass, peel outer layers and cut the fresh green into thin slices. Trim the leek, rinse and cut into rings. Rinse the broccoli and cut up into florets. Remove the skin from the meat and tear meat into small pieces, discarding bones.

Boil the broth, add prepared vegetables and peas, lemongrass and meat and let it cook for 6-8 minutes. Then season with soy sauce.

4.

Toast the sesame seeds in a pan without oil. Then mix with honey and chile sauce and serve with the soup.
