1 small red chili pepper
2 shallots
100 milliliters white wine
200 grams Plum butter

Preparation steps

For the chicken wings: Season 2 tablespoons oil with salt and pepper then mix in the paprika. Rub over the chicken wings, place on a baking sheet lined with parchment paper and bake in a preheated oven at 200°C (gas mark 3-4, fan: 180°C) (approximately 400°F) for about 20-25 minutes, turning once. Transfer to a preheated grill and grill until crispy.

For the sauce: Trim the chile, rinse and finely chop. Peel the shallots and finely dice. Heat the remaining oil in a small pan and sauté the shallots and chile. Deglaze with the wine and cook until the liquid reduces to 2-3 tablespoons. Stir in the plum butter and season with salt and pepper. Pour into a serving bowl. Arrange the chicken wings on a serving platter and sprinkle with cilantro. Serve with the plum sauce.
