- 1 cup granulated sugar
- ½ cup honey (or light corn syrup)
- ¼ tsp salt
- ¼ cup water
- 1 ½ cups Sesame seeds
- 1 tsp pure vanilla extract
- 1 Tbsp unsalted butter (plus extra for pan)
- 1 tsp baking soda
- 1 Tbsp red or pink peppercorns roughly crushed (optional)

- 1 Candy thermometer
- 1 jelly roll pan
Preparation steps

In a heavy bottomed 3-quart saucepan, set over medium heat, combine sugar, honey, salt, water, sesame seeds, vanilla and butter. Bring to a boil, stirring constantly.

Once the mixture is boiling, continue to cook without stirring for 15 to 20 minutes or until a candy thermometer reaches 270º F. The mixture will turn a rich amber caramel color.

Grease a jelly roll pan with butter or nonstick cooking spray. Place greased pan on a trivet.

Remove the saucepan from the stove. Stir the baking soda into the sesame seed mixture, this will cause the mixture to foam up. Carefully, pour the hot mixture onto the prepared jelly roll pan and quickly spread the mixture with a metal spatula to a thickness of 1/4-inch.

Allow the brittle to cool and harden for about 30 minutes before breaking into pieces. Garnish with roughly crushed peppercorns if desired. Store in an airtight container.
