1 chicken (1,2 kg)
2 bay leaves
2 allspice
salt
1 carrot
1 Rutabaga (about 500 grams)
1 stalk Leeks
freshly ground peppers
2 Tbsps scallions
4 parsley (for garnishing)

Preparation steps

Rinse chicken, pat dry and place with spices and a good pinch of salt into a large pot. Add cold water so that chicken is covered. Bring to a boil and simmer for about 1 hour on medium heat. Rinse and par dry all vegetables, peel and cit into bite-sized pieces.

Remove chicken from broth and strain broth into another pot. Add vegetables and simmer for about 15 minutes. Remove chicken skin and loosen meat from bones, cut meat into bite-sized pieces. Add chicken meat to the soup and season with salt and pepper. Pour into soup bowls and sprinkle with chives and garnish with parsley. Serve.
