- 1 chicken (1.5 kg)
- 2 onions
- 4 garlic cloves
- 2 Candied ginger
- 2 carrots
- 1 bunch parsley
- 1 untreated Organic orange
- 6 bay leaves (constricted)
- 1 Tbsp Caraway
- 1 Tbsp Juniper berries
- 2 stalks cinnamon
- 1 Tbsp Star anise
- 1 Tbsp Coriander
- 1 Tbsp black peppers (unground)
- 2 Tbsps olive oil

Preparation steps

Rinse chicken and place in a large pot filled with water. Cut onions with the skin roughly into quarters. Peel garlic cloves. Leave ginger unpeeled and cut slightly smaller. Peel carrot and cut into thick slices. Cut parsley once. Rinse and halve the orange. Add onion, garlic, ginger, carrots, parsley and orange to chicken.

Combine all remaining spices with oil to chicken and cook. Add salt. Boil the whole vigorously, then reduce the heat and the soup covered over low heat for 1 1/2 hours. Before serving soup, remove bones and skin from chicken. Serve clear chicken soup with chicken, along with optional bread or rice.
